INGREDIENTS:
- 1 head of romaine lettuce
- 4 artichokes
- 2 salad tomatoes
- 1 bunch of fresh spinach
INGREDIENTS (Mustard dressing):
- Dijon mustard
- 1 lemon
- ground black pepper
- olive oil
- salt
INSTRUCTIONS:
Remove the stems and the tough, dark outer leaves from the
artichokes, then cut the rest lengthwise into four pieces. Boil
for 10 minutes in water with a pinch of salt. Afterwards, drain the artichokes and set them aside.
To prepare the dressing for the artichokes, mix one tablespoon of mustard, the lemon juice, the ground black pepper, the salt, and finally the olive oil. Add this dressing to the boiled artichokes and letting them sit for one hour in the refrigerator.
Next, wash the lettuce and spinach and cut the leaves to your liking. Wash and cut the tomatoes into wedges. Assemble the salad with
the lettuce leaves, spinach, and chopped tomatoes, and finally add the artichokes marinated in the mustard dressing.
